For the Coffee Table Book – Issue #15

Sauté. The aroma of garlic and onions is perhaps the most vivid scent that I remember from my childhood.

Sautéing garlic and onions fills an important role in Philippine cuisines and in the history of Filipino cooking…

Imagine how reliving it may have been for the tired and wounded Katipuneros when Melchora Aquino decided to slaughter and cook her many domestic animals to feed them. Surely, the smell of garlic and onions sizzling in oil would have signaled relief.

Communal cooking characterizes Filipino feasts. In times and in places where catering services were unheard of, cooking is done in the yard. Having been gifted with the time and in a place when this was practiced (and it still is), it was pure delight to walk the streets during fiestas and to smell the aroma of food wafting in the air. It was an olfactory high. Of course, prominent in the scents is the smell of sautéed garlic and onions.

In family celebrations and even in sad times, again in a not so distant time and place, cooking awakened helpful spirits. Neighbors seemed to be duty bound to help. The parade of men and women carrying woks, large cauldrons and ladles was a common sight.  The aroma of sautéed garlic and onions would mean a feeding of the bayanihan spirit.

    di ko na binasa ng buo!

    mula ng nagkabulbol ako di ko matandaan na nagustuhan ko ang bawang..HATE IT!

        hehe natawa ako sa inyo ni dfish kz lagi ding pangasar sa akin na aswang ako!

        at lahat ng amo ko eh alam ang di ko pagkagusto dyan kz talagang tablado sa akin ang luto nila pag may bawang na…kya pinaghihiwalay ako ng luto…bawang free,hehehe!

    Hahaha, natawa din ako kay Pokwe…2nd Base nga muna pala. Actually, first kasi walang nakasulat doon kay Pokwe haha. Hmmm – bawang at aswang, this is legendary and classic kapatid. Sauteed garlic and onions, i too luv the aroma but not the after-sweat scent haha.

    Thanks Joyce… :) Yes, I like the smell of garlic in salted peanuts too…. :)

    Btw, bakit hindi ako makapagcomment sa site mo? Hindi nasi-save… Ilang beses na nangyari ito…

    that would be the scenario in barrios and provinces. when a pig or a cow was brought, the preparation starts the night before.. just to cook at least five dishes.

    this is spice trade!

    Sarap ng onion na may tuyo. Talagang makikita yan palagi sa kusina. yung garlic daw pangontra sa aswang. lol. Pero lately nakikita ko yang onions at tinatanim ko yan sa ft. hehehe.

    i really love garlic. sa totoo lang, kapag naggigisa ako dinadamihan ko ng bawang kase kinakain ko yong iba kapag naprito na sya.

    I just love the taste of a bit of garlic in a dish but I’m not particular in eating them. Like them in fried rice, paksiw and adobo hehehe.

    Why was it that as soon as I saw the first picture (garlic), the first thing that entered my mind was Pinoy aswang movies? Lol!

    I do love garlic and onions too… fried garlic on rice, on peanuts, etc… and onions on pizza, sauteed corned beef, and my uncle’s beef teriyaki dish. Garlic is also good for colds, lowering blood pressure, and many other ailments. I used to swallow a raw piece of garlic for its medicinal benefits… but when it comes out of my system, the smell is… ugh… never mind! Hahaha!

    pwede bang humingi ng sibuyasa at bawang.. tinatamad na akong lumabsa ng bahay para bumili :)

    simple lang yung mga picture pero ang lakas ng dating
